Dry Cooking

Working Principle

  • The desired capacity of curd is measured and filled into the machine. 
  • Once loading is complete, the augers are pre-activated to ensure the curd is fully shredded. 
  • After the curd shredding process is finished, the cooking option is selected. 
  • The heating process can be set as direct or indirect, depending on the user's preference. 
  • The cooking process continues with other recipe adjustments and auger speeds. 
  • Once the heating process is complete, the final product treatment is carried out using the vacuum system. 
  • When the kneading process is finished, the pre-discharge cover of the machine opens automatically, and the product is emptied into the hopper of the transfer machine located in front of the machine. 
  • The transfer machine then moves the product to the desired machines.

Technical Features

  • Precise measurement of the curd put into the hopper with the Loadcell weighing system on the machine. 
  • Ensuring homogeneous mixing of the dough by bidirectional operation of the existing augers in the machine. 
  • Minimization of unwanted odors and air gaps in the cheese with the vacuum pump on the machine. 
  • Alternatives are offered in different loading capacities. 
  • Facilitating the loading system that can be coupled to the machine as an option 
  • Lift Loading System is available. 
  • Possibility of automatic operation depending on the prescription recording feature, 
  • Possibility of periodic heating during automatic operation, which ensures evendistribution of steam during heating, 
  • PLC controlled, 
  • Suitable for cleaning with CIP system, 
  • Pneumatic front and top cover, 
  • Steam filter is available. 
  • Spiral - reducer connection is sealed with a special seal system. 
  • Spirals with bidirectional operation.
